We really like this salad, it does not have any potatoes in it, and is fairly easy to make with only a few ingredients that pair up very well with each other.  Another one of those fast and easy salads!  Hmm, I am starting to notice that I guess I really like those fast and easy ones! :)

Ingredients

20 mushrooms

7 hard-boiled eggs

3 cooked chicken thighs. ( cook them in water that has been salted, seasoned and has a couple of bay leaves)

15 or so dill pickles ( I used up some other ones I had too, that’s why there are 2 different kinds on my plate)

1 bunch of green onions

mayo

 

Slice the mushrooms.

Add to a hot pan that has a few tbs of oil in it, season with salt and pepper and fry till a bit browned and ready.

Julienne the dill pickles.

Chop the onions.

Separate the egg yolks from the whites.  Grate the whites on a large grater, and mash-up the yolks with a fork.

Chop the chicken.

Place the mayo on  a zip-lock bag and cut a small hole at the end for piping it on the layers, makes it so much easier to apply.

Then start layering.

Layer of chicken, mayo.

Layer of mushrooms, mayo.

Layer of dills, mayo.

Layer of whites. mayo.

Then put a strip of mayo on the sides of the salad, smooth it out with back of spoon, and press on the yolks to the side and on top of salad. ( kinda like when you are pressing crumbs onto a cake!)

Sprinkle on green onions, and let it stand at least of couple of hours in fridge before serving.

Chicken/Mushroom Layer Salad
