This Frittata can be served not only for breakfast, I often serve it for brunch.  It is really fast to put together and tastes great with a cup of coffee or tea.  You can use whatever vegetables you have and your favorite cheese.

This is what you will need.

1/2 of a baked potato

1/2 of a red or green sweet pepper

1 tomato

5 or 6 mushrooms

8 eggs

3 tbs milk

1/4 tsp salt

a sprinkle of pepper

1 cup cheese (I used Havarti)

 

Saute the mushrooms and pepper till softened.

Chop the tomato and potato.

In your dish, put the potato, half of your sautéed vegetables and half of the tomato, sprinkle with half the cheese.

In another bowl, mix the eggs, milk, salt and pepper.

Pour the eggs mixture over the vegetables and top with the rest of the sautéed vegetables, tomato and cheese.

Bake at  350 degrees F for about 30 min.
