This crepe/blini cake works great for brunch, it is a dessert and breakfast all in one! :) You can use a jam between the layers with the cream cheese frosting, or you could just use the frosting.  I made a quick cherry jam by bringing sour cherries to a boil, then adding a couple tsp of cornstarch mixed in cold water and adding sugar to taste.  The tart cherries with the cream cheese frosting paired together really well!  I hope you will try it and like it as much as we do!

Ingredients

16 oz cream cheese

2 cup whipping cream

1 cup sugar

Jam (preferable a tart kind)

crepes/blini

 

Whip the heavy whipping cream till firm.

Mix the cream cheese and sugar together.

Combine the heavy whipping cream and cream cheese together.

Start layering the crepes/blini with the frosting and jam.  I did like 4 layers of blini with frosting, then one with jam, so had a total of about 4 or 5 layers of jam in the whole cake.  Don’t put the frosting to thick, the cake will slip and slide! :)
